Doña Consuelo Reserve Chardonnay

 
 
 
 

The chardonnay grapes are grown on 20 year old vines in melozal in the heart of the maule valley. The training system used is a single trellis and are tied in with a knotted cord. The grapes are hand picked, and the harvest produces 9,000 kg per hectare. The wine's composition is 100% chardonnay.

WINE MAKING PROCESS / gentle desteming and crushing of the berries. Cold maceration is conducted over an 12-hour period at 10ºc. Gentle pressing at 0,2 bar and removal of grape juice carried out at 10ºc. Direct application of selected yeast during the fermentation taking place in contact with french oak staves at temperatures of 16ºc. 50% malolactic fermentation which may be induced.

OAK CONTACT: Total period of 6 months in tanks with medium toasted French oak staves from the nevers and alliers.

BOTTLING / Filtration: Sterile filtration. Potential maturation: up to 6 years

TASTING NOTES / golden yellow colour with greenish tones. coconut, caramel and pineapple aromas combines with subtle hints of smoked, toasted vanilla. A full-bodied wine with a soft smokey vanilla undertone balancing the fruit perfectly with the oak for a superb creamy finish on this fresh elegant wine.

FOOD AND DRINK PAIRING / ideal with fish, seafood, smoked salmon, cured meats, parma ham and fresh cheeses. Serve chilled, ideally 10ºc-12ºc.
