Doña Consuelo Varietal Chardonnay

 
 
 
 

The chardonnay grapes are grown on 18 year old vines in melozal in the heart of the maule valley. The training system used is a single trellis and are tied in with a knotted cord. The grapes are hand picked, and the harvest produces 12,000 kg per hectare. The wine's composition is 100% chardonnay.

WINE MAKING PROCESS / gentle desteming and crushing of the berries. Cold maceration is conducted over an 12-hour period at 10ºc. Gentle pressing and removal of must is carried out at 10ºc. Direct application of selected yeast during the fermentation taking place in contact with french oak staves at temperatures of 16ºc.

OAK CONTACT: The wine is unoaked.

TASTING NOTES / intense dark red colour with violet hue. The aroma is bursting with ripe red berry with sublte mint and oak hints. A concentrated palate of intense fruit, subtle oak and notes of chocolate and toffee. This is a well-balanced wine with a pleasant long-lasting flavor.

FOOD AND DRINK PAIRING / ideal with seafood, king crab, smoked salmon, cold meats carpaccio, vegetables terrines and fresh cheeses. Serve chilled, ideally 10ºc-12ºc.
