The carignan grapes are grown on 80 year old vines in melozal in the heart of the maule valley. the conduction system used is a simple crosspiece. A manual harvest produces 10,000 kg per hectare. The wine is 100%carignan.

WINE MAKING PROCESS / gentle desteming and crushing of the berries. Cold maceration is conducted over an 24 hou period. Direct sown during the fermentation taking place at temperatures of 24ºc over a 10 day period. Alcoholic post fermintation maceration takes place over a period of10 days. 100% natural malolactic fermentation. 4 pumping over per day

AGEING IN BARREL: The wine is unoaked .

BOTTLING / Filtration:The wine is unfilterd to maximize flavour. Potential maturation: up to 8 years

TASTING NOTES / Colour: Intense and deep bright violet red with a blackish tone. Intense Aroma, persistent with high concentration of ripe raspberries and dried cherries mingled very well with soft and agreeable vegatable notes in the mouth it is full-bodied, concentrated, fruity and fresh. It has good acidity and good level of astringency it is a strong indication of the wine variety. it is persistent with a very particular personality.

FOOD AND DRINK PAIRING / ideal with well-seasoned dishes, fowl, barbecued pig, lamb, goat and strong cheeses. Serve at -20ºc.
