the grapes of carménère are cultivated
from 7 year-old vines grown in melozal,
located in the heart of the maule valley.
the conduction system consists in a simple
trellis and are tied in with a double guyot.
total production is of 10.000 kg per hectare.
the wine’s composition is 90 % carménère,
5% cabernet sauvignon and 5% carignan.
WINE MAKING PROCESS /stem removal and gentle crushing of the berries. cold maceration is conducted over an 24-hour period. the selected yeast is directly sown during the fermentation process taking place at temperatures of 24ºc over an 10- day period. alcoholic post-fermentation maceration takes place over a period of 10 days .100% natural complete malolactic fermentation. 4 pumping over per day.
AGEING IN BARREL : The wine is unoaked.

TASTING NOTES /intense dark red colour with violet tinges. cherry and blackberries mingled with soft notes of earth, pepper and mint. concentrated with great varietal characteristics. dried plums, crystallized cherries and raisins. it is well- balanced with round ripe tannins.
FOOD AND DRINK PAIRING / enjoy it with red and white meats, pastas, pizzas, meatballs and mature cheeses. the recommended serving temperature is 18ºc
